Sushi Roll Treats


I'm sure it comes as no surprise that none of my picky sproutlets likes sushi. Actually, that might not be true... the truth is, they don't actually know whether or not they like sushi, because they are too afraid to try it! They stick their nose up at anything fishy. I have to admit they haven't had much opportunity to eat seafood though, and that's my fault, because I don't like it. So the only fish they think they like is battered fish'n'chips style.  I wanted to make sushi for my asian themed muffin tin though... so I made picky-kid-friendly sushi roll treats!


Marshmallow Crispy Rice Sushi Roll Treats

For about 24 pieces of "sushi", you will need:
About 3 cups of just-prepared marshmallow crispy rice treat (I used the famous Rice Krispies Treats recipe, halved). 
4 fruit leather roll-ups for the outer layers, or 8 if you want it thicker or want to make fatter rolls. 
8 fruit leather roll-ups for the centres, 2 per roll.
Margarine or butter
Waxed paper

Spread out some waxed paper and unroll the fruit leather. Spread the pieces for the outer layers flat on the waxed paper. Re-roll the pieces for the centres into tight cylinders. Scoop about 3/4 cup (1/4 of) marshmallow crispy rice mixture onto the bottom half of each outer fruit leather piece. Butter your fingers and press it flat. Top with fruit leather cylinders.


Fold the crispy rice side over the fruit leather cylinders, then roll toward the top half, forming a log wrapped in fruit leather. Roll the wax paper tightly around the log and twist the ends, roll again if needed to shape. Chill in freezer for about 10 minutes, or until firm enough to cut without squashing.


Lightly butter both sides of a knife to prevent sticking. Unwrap and slice logs at desired intervals. I got 6 pieces from each of my rolls.


Store in an air-tight container at room temperature for a few days - if they last that long - or freeze, and thaw at least 15 minutes before serving.
