This past weekend, we drove North to visit family in BC, Canada, for a pot-luck gathering. My sister-in-law brought the most amazing marshmallow flower cupcakes in a rainbow of colours!

The flower petals are mini-marshamallows! To make the petals, she cuts pastel mini marshmallows in half diagonally and dips the sticky side in coloured sugar. To make different sized petals, she cuts the diagonal unevenly, so one marshmallow half is bigger than the other, for bigger and smaller petals. After all the marshmallow petals are sugared, she uses frosting to assemble the flower shapes on top of frosted cupcakes. Beatutiful!
