I had an idea about the peanut butter sandwiches. Not sure if your picky eater would notice or not, but I found this mixture on a site I like (http://www.healthykiddosnacks.com/1/post/2011/09/healthy-kiddos-ridiculously-nutritious-spice-mix.html) and I sprinkle it on EVERYTHING that I can get away with. Yogurt, ice cream, and peanut butter sandwiches. It's fairly flavorless, but the cinnamon in it blends well into sandwiches.
